Fudgiest Chewiest Chocolate-y Brownies
The fudgiest, chewiest, most chocolate-y brownies we've come across (doesn't hurt that they're vegan and gluten free)
Ingredients
- 1/4 cup nut butter (we used almond)
- 1/2 cup coconut sugar
- 1/3 cup agave or maple syrup
- 1/3 cup melted coconut oil
- 3/4 cup raw cacao powder
- 1 tsp pure vanilla extract
- 1/4 tsp salt
- 2 flax eggs
- 1/3 cup tigernut flour or oat flour
- 1 bar of @eatkyoot, finely chopped (+ more squares for decoration)
Directions
- Make the flax eggs by whisking together 2 tbsp golden ground flaxseed with 6 tbsp water and setting for 15 mins)
- Preheat oven to 165°C and line a 20cm square baking pan with baking paper
- In a medium bowl, whisk together nut butter, coconut sugar, maple syrup and melted coconut oil
- Add cacao powder bit by bit, whisking until shiny and smooth, then add in vanilla, salt, and flax eggs
- Fold in the oat / tigernut flour in increments using a rubber spatula until no flour patches remain, then fold in chocolate chips
- Pour batter into pan and smooth into an even layer using a rubber spatula.
- Bake for about 30 mins (adding the extra kyoot squares after 20-ish minutes)
- Let cool for an hour, then slice into 9-16 brownies. Enjoy!
